- 1 Tbsp Smoked paprika

- 1 Tbsp Dried thyme

- ¼ cup chopped Carrots

- ¼ cup chopped Celery stalks

- 2 Tbsp Plain flour

- 750 ml Beef stock

- 1 Tbsp Tomato paste

 Instructions:

Step 1: Preheat the Oven

- Preheat your oven to 200°C (400°F).

Step 2: Prepare the Beef Roast

- Pat the beef roast dry with a paper towel.

- Drizzle 1 Tbsp oil over the roast.

- Season it with 1 Tbsp of Seven Colours Grill Seasoning and 1 Tbsp black pepper, making sure to coat evenly.

Step 3: Sear the Meat

- In a large casserole or Dutch oven, heat 1 Tbsp oil over medium-high heat.

- Sear the beef roast on both sides until browned (about 3-4 minutes per side).

- Remove the roast from the pot and set it aside.

Step 4: Sauté the Vegetables

- In the same casserole, add chopped onion and cook until translucent.

- Add minced garlic, smoked paprika, and 1 Tbsp of Seven Colours Grill Seasoning. Cook for 1 minute, allowing the spices to bloom.

- Stir in dried thyme, chopped carrots, celery, and flour. Cook for 2 minutes to combine.

Step 5: Add Stock and Tomato Paste

- Slowly pour in 750 ml of beef stock and 1 Tbsp tomato paste, stirring continuously until the mixture thickens.

Step 6: Slow Cook the Beef Roast

- Return the seared beef roast to the casserole, ensuring it’s submerged in the liquid.

- Cover the casserole with a lid and cook in the preheated oven for 3 hours, or until the beef is tender and easy to shred.

Step 7: Serve

- Shred or slice the beef roast as desired. Serve over mashed potatoes or rice for a complete meal. Pair with seasonal vegetables for added flavor and nutrition.

 Cooking Tips:

- For the best results, allow the beef roast to rest for 10 minutes before shredding.

- This recipe pairs perfectly with mashed potatoes, rice, or roasted vegetables.
