Ingredients:

For the beans:⁣⁣

- 1 teaspoon olive oil⁣ (optional)

- 1/2 cup finely chopped onion⁣⁣

- 4 cloves garlic⁣⁣

- 1 can cannellini beans⁣⁣

- 2 teaspoons cumin⁣⁣

- 2 teaspoons paprika⁣⁣

- 1 teaspoon oregano⁣⁣

- 1 teaspoon chili powder⁣⁣

- 1 teaspoon pepper + salt⁣⁣

- 1 teaspoon coriander powder, or 2 tablespoons fresh cilantro⁣⁣


For the sweet potatoes:⁣⁣

- 2 sweet potatoes, cut into quarter-size pieces (leave skin on)⁣⁣

- Olive oil to coat (~1-2 tablespoons)⁣ (optional)

- 2 teaspoons paprika⁣⁣

- 1/2 cup nutritional yeast⁣⁣

- Salt + pepper to taste⁣⁣


For the quinoa:⁣⁣

- 1 cup quinoa⁣⁣

- 1 3/4 cups broth⁣⁣


Instructions:

1. Preheat oven to 425 degrees Fahrenheit and line a baking pan with a Silpat mat or parchment paper. ⁣⁣


Sweet potatoes:⁣

1. Wash and cut potatoes into bite-sized pieces, leaving the skin on. 

2. Drizzle olive oil and sprinkle spices across the potatoes, using only half of the nutritional yeast. 

3. Toss the potatoes with your hands and spread them out evenly on the baking pan. 

4. Sprinkle the remaining nutritional yeast on top and bake in the oven for approximately 30 minutes until crispy and fork-tender.⁣⁣


Beans:⁣

1. While the potatoes are cooking, heat olive oil in a skillet over medium heat. 

2. Add onion and sauté for 3 minutes, then add garlic and the spices. Sauté for 30 seconds. 

3. Add the beans (with the liquid from the can). 

4. Cover and reduce to simmer, cooking for 20 minutes. Add more water if the beans become too thick. ⁣⁣
