Ingredients
- 2 cups soy curls
- Warm water (for rehydrating soy curls)
- 1 bag frozen broccoli florets or 1 large head of fresh broccoli
- 1-2 scallions
- 1 tablespoon avocado oil (or other cooking oil)
Sauce
- 1 cup water
- 1 heaping tablespoon cornstarch + 2 tablespoons water (for dissolving cornstarch)
- 1/4 cup coconut aminos or light soy sauce
- 1/4 cup sriracha
- 2 tablespoons coconut sugar, brown sugar, or maple syrup
- Splash of rice vinegar (optional)
Instructions
1. Rehydrate Soy Curls: Place soy curls in a bowl and cover with warm water. Let them soak for 10 minutes. Drain excess water.
2. Prepare Vegetables: If using fresh broccoli, cut it into florets. Chop scallions.
3. Cook Soy Curls: Heat avocado oil in a large wok or skillet over medium heat. Add soy curls and pan fry until lightly browned.
4. Add Vegetables: Add broccoli florets and scallions to the pan. Sauté until broccoli is tender but still firm. If using fresh broccoli, add a few tablespoons of water to aid cooking.
5. Make the Sauce: In a small bowl, dissolve cornstarch in 2 tablespoons of water. Stir in coconut aminos or soy sauce, sriracha, sugar or syrup, rice vinegar, and 1 cup of water.
6. Combine and Cook: Pour the sauce over the soy curls and broccoli. Bring to a boil, then simmer for a few minutes until the sauce thickens and everything is well-coated.
7. Serve: Serve the saucy soy curls and broccoli over brown rice or your grain of choice. Enjoy!
