- 26g Red Onion

- 20g Red Pepper

- 40g Avocado

- 25g Romaine Lettuce

- 50g Sweetcorn

- 50g Black Beans

- 20ml Lime Juice

- 1 tsp Coriander 


Instructions:

1. Preheat your air fryer to 190°C. Coat the salmon fillet with the Mexican paste and cook in the air fryer for 8-10 minutes.

2. While the salmon is cooking, dice the cherry tomatoes, red onion, red pepper, and romaine lettuce. Measure out the sweetcorn and black beans. In a bowl, mix these veggies (excluding the avocado) with lime juice and coriander.

3. Heat the Thai Lime & Herb rice according to the package instructions and add it to the bowl.
