Ingredients:
- 1.5 cups dry lentils, cooked in vegetable broth
- 3 carrots, finely diced
- 3 cups sliced red cabbage

- 1 tbsp dried parsley
- 2 tsp za'atar seasoning

Lemon Vinaigrette:
- Juice of 1/2 lemon
- 1 tsp vinegar
- 1/4 cup olive oil
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 2 tsp agave or maple syrup
- 2 tsp dijon mustard
Instructions:
1. Cook lentils in vegetable broth until al dente. Drain and set aside to cool on a baking tray.
