Easy Cilantro Lime Chicken Wings Recipe

Ingredients
:

- 2 lbs. chicken wings (drums and wingettes)

- ½ cup chopped cilantro (leaves & stems are okay)

- ¼ cup + 2 Tbsp fresh lime juice (approximately 4 limes)

- 2 garlic cloves

- 2 Tbsp avocado oil (or extra virgin olive oil)

- 1 tsp keto-friendly chili powder

- ½ tsp salt

- ½ tsp pepper

- ¼ tsp cayenne (optional)



 Instructions:

Marinating the Chicken:

1. In a food processor, combine cilantro, lime juice, garlic, avocado oil, chili powder, salt, pepper, and cayenne (if using). Blend until smooth. 

2. Place chicken wings in a large plastic bag or bowl. Add the marinade, seal the bag, or cover the bowl. Allow to marinate for 30 minutes to 4 hours.

3. (Optional) Prepare an additional half batch of marinade to reserve for dipping sauce later.


Baking Method:

1. Preheat the oven to 400 degrees Fahrenheit. Place a large wire rack on a rimmed baking pan and coat both with cooking spray.

2. Arrange marinated wings on the rack in a single layer. Bake for 30-35 minutes. Do not flip the wings during baking.

3. For extra crispiness, broil the wings for 2-3 minutes after baking.

4. Serve immediately with lime wedges and reserved dipping sauce.
