Pumpkin Samosas Recipe (Uzbek Samsa)

Makes 14-15 samosas

 Homemade Dough Ingredients:

- 2 cups all-purpose flour

- 1 teaspoon salt

- 2-3 tablespoons avocado oil

- 1/2 cup hot water

- 3 tablespoons non-dairy yogurt

- A handful of sesame seeds


 Filling Ingredients:

- 1 medium-sized butternut squash (about 2 cups)

- 1 large red onion

- 5-6 fresh curry leaves (optional)

- 1 teaspoon salt

- 1/2 teaspoon pepper

- 1/2 teaspoon cumin

- 2 teaspoons coconut or date sugar

- 3 tablespoons avocado oil



Method:

1. Preheat oven: Preheat your oven to 380 degrees F (193 degrees C).  

2. Prepare dough: In a stand mixer, combine flour, hot water, non-dairy yogurt, and salt. Knead the dough for 5 minutes until smooth. Cover and let it rest for 30 minutes.

3. Prepare filling: Mince the onion and pumpkin. You can use a food processor to coarsely mince all the filling ingredients. Mix the minced ingredients with salt, pepper, cumin, sugar, and oil. 

4. Shape and fill: Divide the dough into 12-15 pieces. Roll each piece into a ball and then roll it out into a 4-5 inch diameter circle. Repeat for each dough piece. Place 2 tablespoons of pumpkin mixture onto each dough circle and fold it into a triangle shape. Refer to the highlights for step-by-step instructions. 

5. Bake: Line cookie trays with parchment paper. Place the samosas with the folded side down on the tray. Brush each samosa with almond or soy milk and sprinkle with black sesame seeds. Bake for 30 minutes or until the tops are golden brown.
