Baked Chicken with Potatoes and Carrots Recipe

Serves 3-4

Ingredients for Chicken:

- 3-4 chicken breasts

- 1 tsp salt

- 1 tbsp lemon pepper

- 1 tbsp yellow mustard

- 1 tsp onion powder

- 1 tsp paprika

- 1 tbsp olive oil


Ingredients for Veggies:

- 2 medium potatoes (preferably Yukon Gold)

- 1 large carrot or 2 medium carrots

- 1 tbsp lemon juice or juice of half a lemon

- 1 tbsp olive oil

- 1 tbsp garlic powder (or fresh garlic)

- 1/2 tsp paprika

- Salt and pepper to taste



Instructions

1. Preheat oven to 400°F (200°C).

2. Season chicken breasts with salt, lemon pepper, yellow mustard, onion powder, paprika, and olive oil. Set aside.

3. In a baking dish, combine potatoes and carrots. Season with lemon juice, olive oil, garlic powder, paprika, salt, and pepper. Mix well.

4. Place seasoned chicken breasts in the baking dish with potatoes and carrots.

5. Bake for 30-35 minutes or until the internal temperature of chicken breasts reaches 165°F (75°C).

6. Garnish with fresh parsley before serving. Enjoy!


Notes:

- If using a larger dish, you can accommodate up to 4 chicken breasts.

- Slicing the top of the chicken breasts allows for quicker and thorough cooking.

- Oven times may vary; adjust accordingly. Typically, baking takes between 30-40 minutes, depending on chicken breast thickness and oven performance.

- You can cover the dish for the first half of the baking time if desired, then remove the cover.
