Ingredients:
For the Chipotle Chicken:
- 2 chicken breasts
- 1 red onion, diced
- 3 garlic cloves, minced
- 2 tsp chipotle paste (adjust according to spice preference)
- 1 tsp dried oregano
- 1 bay leaf
- 1 tsp brown sugar
- 400ml tomato passata
- 150ml chicken stock
- Oil
- Salt
- Pepper

- 3 tomatoes, finely chopped
- 1/2 red onion, finely chopped
- Juice of 1 lime
- Small bunch of coriander, finely chopped
- Salt
To Serve:
- Rice
- Chopped lettuce
- Sour cream
- Sliced avocado

- Chopped coriander
Instructions:
1. In a saucepan over medium-high heat, sauté the diced onion and minced garlic in a dash of oil until translucent. Add chipotle paste, oregano, bay leaf, and brown sugar. Cook for about 5 minutes until fragrant and slightly darkened. Adjust heat if needed and add a splash of water if it begins to stick.
2. Pour in tomato passata, chicken stock, and add the chicken breasts. Season generously with salt and pepper. Bring to a boil, then reduce heat to simmer for 20 minutes until chicken is fully cooked. If the sauce thickens too quickly, cover with a lid or add a bit more water.
3. While the chicken cooks, prepare the salsa by mixing chopped tomatoes, onion, coriander, lime juice, and salt in a bowl.
4. Once the chicken is cooked, remove from the sauce and shred using two forks. Return the shredded chicken to the sauce.
5. Assemble your burrito bowl by layering rice, chipotle chicken, lettuce, salsa, avocado slices, and a dollop of sour cream. Garnish with chopped coriander and a squeeze of lime juice.
