Ingredients:

For the Tofu:

- 1 block of extra firm tofu, pressed and cubed

- 2 tbsp tamari

- 1 tbsp rice vinegar

- 1 tbsp maple syrup

- 1 tsp grated ginger

- 1 tsp minced garlic

- 1 tbsp hoisin sauce

- 2 tbsp neutral oil for frying


For the Watermelon "Tuna":

- 400g watermelon, cubed

- 2-4 tbsp liquid aminos

- Juice of 1 lime

- 3 cloves garlic, minced

- 3 tsp sesame oil

- 2 tbsp mirin

- 2 sheets of nori, cut into small, thin strips


Additional Ingredients:

- 4 servings of cooked rice of your choice

- 1/2 small red cabbage, shredded

- 1 small cucumber, sliced

- 2 carrots, julienned

- 4 spring onions, sliced

- Sesame seeds

- 4 tbsp vegan sriracha mayo


Instructions:

For the Tofu:

1. In a small bowl, combine tamari, rice vinegar, maple syrup, ginger, garlic, and hoisin sauce (excluding the tofu and frying oil). Pour over cubed tofu and toss to coat. Marinate in the fridge, covered, for at least 30 minutes.

2. Heat neutral oil in a frying pan. Fry the marinated tofu until golden and crispy on all sides.

For the Watermelon "Tuna":

1. In a sealable container, combine watermelon cubes, liquid aminos, lime juice, minced garlic, sesame oil, mirin, and nori strips. Refrigerate for at least an hour or overnight.

2. Place marinated watermelon (reserving the marinade) on a lined baking tray and roast for 1.5 hours at 300°F, rotating occasionally.

Assembly:

1. In your favorite bowl, assemble cooked rice, shredded red cabbage, sliced cucumber, julienned carrots, and spring onions.

2. Add the crispy tofu and roasted watermelon "tuna" on top.

3. Sprinkle with sesame seeds and green onions.

4. Drizzle with vegan sriracha mayo for an extra kick.
