Ingredients

For the Grilled Chicken and Salad

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 5 cups romaine lettuce, washed and chopped

  • 1 large ripe avocado, sliced

  • 1 cup cherry tomatoes, cut in half

  • 1 cup ripe mango, diced into small cubes

  • 1 lime, sliced into wedges

  • 2 tablespoons freshly chopped parsley or cilantro

For the Lime Honey Dressing

  • 3 tablespoons olive oil

  • 2 tablespoons fresh lime juice

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • 1 garlic clove, finely minced

  • Salt and freshly ground black pepper, to taste

Step-by-Step Instructions

1. Prepare the Chicken Seasoning

In a small mixing bowl, combine the smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Stir the spices together until evenly blended.

Pat the chicken breasts dry using paper towels. Drizzle the chicken with olive oil and rub it over both sides. Sprinkle the prepared seasoning mixture generously over the chicken, making sure each breast is evenly coated.

2. Grill the Chicken

Heat a grill pan or large skillet over medium-high heat. Allow the pan to become hot before adding the seasoned chicken breasts.

Place the chicken in the pan and cook for approximately 5 to 6 minutes on each side. Cooking time may vary slightly depending on the thickness of the chicken. The chicken is ready when golden and lightly charred on the outside and the internal temperature reaches 165°F (74°C).

Remove the cooked chicken from the heat and transfer it to a clean plate. Allow it to rest for about 5 minutes. This important step helps the juices settle inside the chicken, keeping the meat tender and flavorful. Once rested, slice the chicken into thin strips.

3. Make the Lime Honey Dressing

While the chicken is resting, prepare the homemade dressing. Add the olive oil, freshly squeezed lime juice, honey, Dijon mustard, and minced garlic to a small bowl.

Season with a little salt and black pepper, then whisk everything together until the dressing becomes smooth and well combined. Taste and adjust the seasoning or honey if desired.

4. Assemble the Power Salad

Place the chopped romaine lettuce in a large salad bowl or arrange it across a serving platter.

Add the creamy avocado slices, halved cherry tomatoes, and sweet diced mango. Arrange the ingredients evenly around the lettuce for a beautiful and colorful presentation.

Place the sliced grilled chicken over the top of the salad.

5. Dress and Serve

Drizzle the fresh lime honey dressing generously over the entire salad just before serving. Alternatively, place the dressing in a small bowl and serve it on the side.

Sprinkle freshly chopped parsley or cilantro over the salad and add lime wedges around the bowl. Squeeze a little extra lime juice over the salad for an additional fresh citrus flavor.

Serve immediately and enjoy this vibrant, protein-packed salad as a refreshing lunch, quick weeknight dinner, or healthy meal-prep option.
